Purple Hulls - RECIPE?

So, with all the talk about Purple Hulls music around here, I just found Purple Hull peas at my local farmers market and got some! Whose got a good recipe?

  • Start by frying 2-4 pieces of bacon in a bean pot.
  • Add water, keep heat on high heading toward a boil.
  • Add half a diced white/yellow onion and a couple diced cloves of garlic
  • Add salt to taste.
  • After water is boiling, add peas
  • Boil for a couple minutes then turn water down to simmer (watch pot for foaming bacon fat wanting to overflow, which you can rake off or stir back into the mixture)
  • Simmer (stir occasionally) for 25-30 minutes, tasting here and there for pea tenderness and broth saltiness. Add salt if necessary and turn heat off when pea mashes easily
  • Enjoy with sides of cornbread, mater, onion, and hot pepper :slight_smile:
  • Leftovers are awesome.

It’s pretty late in the season to find them fresh, great job!

One other secret trick I do is add a tablespoon of wagyu tallow to the pot :slight_smile:
