The reason for the pauses is because you are THINKING. Over time you will learn to LISTEN and your actions will become automatic just like when you drive a car or operate machinery. Your brain doesn’t wait for you to THINK what to do at a possible danger ahead, it automatically reacts and responds accordingly.

I feel like I’m playing very clean and smooth but it does not sound like the boil dem cabbage at 110bpm

Man, it sure sounds like you got it to me. I heard every note I was expecting to hear. There was that little hiccup at the end on the D, but that happens.
Just some general advice. When you’re playing a lot of open strings, pull your right hand down closer to the bridge. Your banjo will sound more “banjo-y”. You move your right hand toward the neck when you’re playing higher frets.
If you have a tuner, use it every time you sit down to play. Even if you haven’t developed the ear for hearing proper tuning, your ears know something isn’t quite right. All kinds of things throw banjos out of tune; temperature, humidity, hurt feelings, existing… I often retune mine several times in 1 practice session.
